Getting me to eat a salad takes work, which can make it harder to eat healthy. So I’ve learned to mimic my favorite Sweetgreen recipe to create an at-home lunch that’s both simple and satisfying.
I combine mixed greens, roasted chicken, shredded carrots, diced onions, a chopped hardboiled egg and my go-to dressing, Skinny Creamy Balsamic Vinaigrette. This dressing is so darn simple to make and low in calories too!
There are two ways you can make this dressing:
- Combine the ingredients in a bowl, whisk it all together, and store in a sealed container.
- But the way I prefer is combining the ingredients in a mason jar, shake and voila! Less mess!
